Heavenly White Snack Cake

Ingredients:

For the Cake:

Ingredients: Quantity
All-purpose flour 2 ¼ cups (280 g)
Baking powder 2 ½ teaspoons
Salt ½ teaspoon
Unsalted butter, softened ¾ cup (170 g)
Granulated sugar 1 ¾ cups (350 g)
Large egg whites, at room temperature 4
Vanilla extract 1 teaspoon
Whole milk, at room temperature 1 cup (240 ml)

For the Frosting:

Ingredients: Quantity
Unsalted butter, softened 1 cup (230 g)
Powdered sugar, sifted 4 cups (500 g)
Vanilla extract 2 teaspoons
Heavy cream or milk 2-4 tablespoons

Instructions:

  1. Preheat & Prepare: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan, or line it with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Cream Butter & Sugar: In a large mixing bowl, beat the softened butter and sugar together until the mixture is light and fluffy, which should take about 2-3 minutes.
  4. Add Wet Ingredients: Add the egg whites to the butter mixture, one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Combine: Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients, mixing just until everything is combined.
  6. Bake: Pour the batter into the prepared pan and smooth the top with a spatula. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan before frosting.
  7. Make the Frosting: In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar, beating on low speed until combined. Stir in the vanilla extract and heavy cream (or milk), one tablespoon at a time, until the frosting reaches your desired consistency.
  8. Frost & Serve: Spread the frosting evenly over the cooled cake. Slice into squares and serve.

Tips for Success

  • Room Temperature Ingredients: Make sure the butter, egg whites, and milk are at room temperature to ensure a smoother, more uniform batter.
  • For a Lighter Texture: For an even lighter cake, you can whip the egg whites separately to stiff peaks before gently folding them into the batter at the end.
  • Customization: Add a layer of fruit jam or fresh berries between the cake and frosting for a delicious twist.
