This hearty Amish Breakfast Casserole is a warm, comforting dish, baked to perfection with layers of savory ground beef, hashbrowns, and creamy cottage cheese, all bound together with eggs and finished with melted cheddar on top.

Amish Breakfast Casserole

Ingredients:

  • 1 pound ground beef
  • 1 onion, chopped
  • 3 cups shredded hashbrowns
  • 1 1/2 cups cottage cheese
  • 2 cups shredded cheddar cheese (divided)
  • 6 large eggs
  • 1/2 cup milk
  • Salt and pepper, to taste

Instructions:

Step 1: Preheat and Cook Meat
Preheat the oven to 350°F (175°C). In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is soft. Drain any excess fat.

Step 2: Combine Base Ingredients
In a large mixing bowl, combine the cooked beef and onion with the shredded hashbrowns, cottage cheese, and 1 1/2 cups of the shredded cheddar (reserve 1/2 cup for topping).

Step 3: Prepare Egg Mixture
In a separate bowl, whisk together the eggs, milk, salt, and pepper until smooth.

Step 4: Assemble Casserole
Pour the egg mixture over the beef and hashbrown mixture, stirring to combine. Transfer the mixture to a greased 9×13-inch baking dish and spread it evenly.

Step 5: Top and Bake
Sprinkle the remaining 1/2 cup of cheddar cheese on top. Bake for 35–40 minutes, or until the casserole is set and the top is golden brown.

Step 6: Serve
Allow to cool for a few minutes before serving. Enjoy a hearty, satisfying breakfast!
