Delicately Soft Brioche

This recipe creates an airy, tender brioche enriched with milk and butter, using a distinctive technique that adds an extra swipe of butter and a sprinkle of sesame seeds for added flavor.

Ingredients:

How to Make Soft Brioche:

Step 1 — Mix the Dry Ingredients:
In a large mixing bowl, combine the 380 g flour, 20 g cornstarch, 7 g salt, and 7 g dry yeast. (Note: Although the steps mention baking powder, the ingredient list specifies yeast, so yeast is used.)

Step 2 — Form the Dough:
Add in the 40 g melted butter, 150 ml hot milk, 40 ml vegetable oil, 1 egg, and 50 g sugar. Knead everything together until the dough becomes smooth and stretchy.

Step 3 — First Rise:
Cover the dough and let it rest somewhere warm for about 1 hour, or until it has doubled in size.

Step 4 — Shape & Add Flavor:
Punch down the risen dough and divide it into equal portions. Roll each piece into a ball, then flatten into a disk. Spread melted butter over half of each disk and sprinkle with sesame seeds.

Step 5 — Assemble & Let Rise Again:
Roll up each disk and place them into a baking dish, slightly overlapping. Cover and let them proof for another hour.

Step 6 — Bake to Golden Goodness:
Brush the tops with beaten egg yolk for a shiny finish. Bake at 180°C/350°F for about 25 minutes, or until the brioche is beautifully golden and fully baked.
