This Asparagus, Bacon & Chicken Potato Casserole is an elegant, all-in-one meal that turns the flavors of a classic Sunday roast into a single comforting dish. The smoky bacon and thyme-scented cream sauce make every bite—from tender asparagus to hearty potatoes—rich and flavorful.


Asparagus, Bacon & Chicken Potato Casserole
Ingredients:

Protein & Vegetables

  • 4 boneless, skinless chicken breasts
  • 1 lb fresh asparagus, trimmed and cut into 1-inch pieces
  • 6 slices of bacon, chopped
  • 3 cups potatoes, diced into ½-inch cubes
  • 1 medium onion, diced
  • 2 garlic cloves, minced

Sauce & Seasoning

  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sharp cheddar cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme leaves
  • ½ teaspoon paprika
  • Salt and black pepper, to taste

Instructions:

Step 1: Cook the Bacon & Prep:
Preheat oven to 375°F and lightly grease a 9×13-inch baking dish. In a large skillet over medium heat, cook the chopped bacon until crisp. Transfer bacon to a paper towel-lined plate, leaving the rendered fat in the skillet.

Step 2: Sauté & Sear the Chicken:
Cook the onion in the bacon fat until soft, then add garlic for 1 minute. Push the onion to the side and season chicken breasts with salt, pepper, and paprika. Sear for 3–4 minutes per side until golden. Remove chicken and slice into strips.

Step 3: Partially Cook Potatoes:
Add diced potatoes to the skillet and cook for 5 minutes to start softening them before baking.

Step 4: Assemble Layers:
Spread half the potatoes in the prepared dish. Layer the chicken strips, crispy bacon, and asparagus on top. Cover with the remaining potatoes.

Step 5: Add Sauce & Cheese:
Whisk together heavy cream, chicken broth, and thyme. Pour over the casserole evenly and sprinkle shredded cheddar on top.

Step 6: Bake & Serve:
Bake uncovered for 25–30 minutes, until cheese is melted and golden. Let rest for 5 minutes before serving so the cream thickens into a silky sauce.
