Cranberry Chicken Bake
Ingredients
| Ingredient | Amount |
|---|---|
| Boneless, skinless chicken breasts | 4 |
| Fresh or frozen cranberries | 1 cup |
| Orange juice | 1/2 cup |
| Honey | 1/4 cup |
| Fresh rosemary sprigs | For garnish |
How to Make It
Step 1: Heat the Oven
Preheat your oven to 375°F (190°C). Lightly coat an oval white casserole dish (or a 9×13-inch pan) with oil or cooking spray. Arrange the chicken breasts in an even layer in the dish.
Step 2: Mix the Glaze
In a small bowl, stir together the cranberries, orange juice, and honey until the mixture is well blended.
Step 3: Combine & Bake
Pour the cranberry mixture over the chicken, making sure each piece is nicely covered. Bake for 30–35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the top is lightly browned.
Step 4: Finish & Serve
Let the dish rest briefly after removing it from the oven. Top with fresh rosemary sprigs before serving.
