Christmas Morning Fix” — just 4 ingredients, and I prep it every Christmas Eve

This easy breakfast casserole is perfect for hectic mornings or relaxed holiday brunches. With savory breakfast sausage and shredded hash browns, it delivers a filling, comforting meal with minimal prep.
Country Breakfast Casserole
Ingredients:
- 1 lb breakfast sausage (pork, mild or hot)
- 6 large eggs
- 2 cups milk (whole or 2%)
- 5 cups frozen shredded hash brown potatoes
Instructions:
Step 1: Prepare the Oven and Baking Dish
Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or cooking spray.
Step 2: Cook the Sausage
Heat a large skillet over medium heat and cook the breakfast sausage, breaking it apart as it browns. Once fully cooked, drain off any excess grease.
Step 3: Add the Hash Browns and Sausage
Evenly spread the shredded hash browns in the bottom of the prepared baking dish, gently pressing them down. Sprinkle the cooked sausage evenly over the potatoes.
Step 4: Mix the Eggs and Milk
In a medium bowl, whisk together the eggs and milk until smooth and slightly airy. Season with salt and pepper if desired.
Step 5: Assemble the Casserole
Slowly pour the egg mixture over the sausage and hash browns, tilting the pan if needed so the liquid distributes evenly.
Step 6: Bake Until Set
Bake uncovered for 40–45 minutes, until the center is firm, the edges are lightly golden, and a knife inserted in the middle comes out clean.
Step 7: Rest Before Serving
Allow the casserole to sit for 5–10 minutes before cutting. This helps it set and makes slicing easier.
