“Hearty Farmer’s Casserole”

This overnight Farmer’s Casserole is a hearty breakfast or brunch dish featuring hash browns, ham, and cheese, all baked in a creamy egg mixture for a comforting start to your day.

Ingredients:

  • Frozen hash browns – 3 cups
  • Shredded Monterey Jack Pepper cheese – 3/4 cup
  • Cooked ham, cubed – 1 cup
  • Green onion, finely chopped – 1/4 cup
  • Eggs, beaten – 4
  • Evaporated milk – 1 can (12 oz)
  • Salt – 1/2 teaspoon
  • Black pepper – 1/4 teaspoon

Instructions:

  1. Grease Baking Dish: Lightly grease a 9×13-inch dish.
  2. Layer Hash Browns: Spread frozen hash browns evenly across the bottom.
  3. Add Ingredients: Layer cheese, cubed ham, and green onion evenly over the hash browns.
  4. Whisk Egg Mixture: In a separate bowl, whisk together eggs, evaporated milk, salt, and black pepper.
  5. Pour & Refrigerate: Pour the egg mixture over the layered ingredients. Cover and refrigerate overnight for best flavor and texture.
