“Hearty Farmer’s Casserole”

This overnight Farmer’s Casserole is a hearty breakfast or brunch dish featuring hash browns, ham, and cheese, all baked in a creamy egg mixture for a comforting start to your day.
Ingredients:
- Frozen hash browns – 3 cups
- Shredded Monterey Jack Pepper cheese – 3/4 cup
- Cooked ham, cubed – 1 cup
- Green onion, finely chopped – 1/4 cup
- Eggs, beaten – 4
- Evaporated milk – 1 can (12 oz)
- Salt – 1/2 teaspoon
- Black pepper – 1/4 teaspoon
Instructions:
- Grease Baking Dish: Lightly grease a 9×13-inch dish.
- Layer Hash Browns: Spread frozen hash browns evenly across the bottom.
- Add Ingredients: Layer cheese, cubed ham, and green onion evenly over the hash browns.
- Whisk Egg Mixture: In a separate bowl, whisk together eggs, evaporated milk, salt, and black pepper.
- Pour & Refrigerate: Pour the egg mixture over the layered ingredients. Cover and refrigerate overnight for best flavor and texture.
- Bake: Preheat oven to 350°F (175°C) and bake 40–50 minutes until set and lightly golden. Let rest 5 minutes before slicing and serving.
