Homestyle Creamy Chicken and Rice

This cozy casserole brings together uncooked rice and bite-size chicken pieces in a rich, creamy blend of chicken broth and cream of celery soup. It bakes up tender and flavorful, then finishes with a layer of melted cheddar cheese on top.
Creamy Chicken & Rice Casserole
Ingredients
- Chicken broth – 3 cups
- Cream of celery soup – 2 cans (10.5 oz each)
- Butter, melted – 1/4 cup (½ stick)
- Boneless, skinless chicken breasts, cubed – 2 large
- White rice, uncooked – 2 cups
- Kosher salt – 1 teaspoon
- Freshly ground black pepper – 1/2 teaspoon
- Garlic powder – 1 teaspoon
- Dried thyme – 1/2 teaspoon
- Cheddar cheese, shredded – 1 cup
Instructions
Step 1: Prepare the Oven and Dish
Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set it aside.
Step 2: Mix Everything Together
In a medium mixing bowl, whisk together the chicken broth, cream of celery soup, and melted butter until smooth. Stir in the uncooked rice, cubed chicken, salt, pepper, garlic powder, and dried thyme, mixing until everything is evenly combined.
Step 3: Bake Covered
Transfer the mixture to the prepared baking dish and cover tightly with aluminum foil. Bake for about 1 hour and 15 minutes, or until the rice is tender and the chicken is fully cooked.
Step 4: Add the Cheese
Remove the foil, sprinkle the shredded cheddar evenly over the top, and return the dish to the oven. Bake uncovered for about 10 minutes, until the cheese is melted and bubbly.
