My boyfriend grew up in Kentucky so when came across this recipe looking for a bday treat I knew I had to try this recipe

These Buttery Pecan Snowball Cookies are tender, melt-in-your-mouth shortbread cookies packed with finely chopped pecans. They are traditionally rolled in powdered sugar twice to achieve their signature “snowball” appearance and sweet finish.

How To Make Buttery Pecan Snowball Cookies:
- Step 1: Preheat Oven: Preheat your oven to 350°F (175°C).
- Step 2: Make the Dough: In a large mixing bowl, combine the softened butter, cup powdered sugar, vanilla extract, salt, and all-purpose flour. Beat with a mixer until a smooth, cohesive dough forms.
- Step 3: Fold in Pecans: Gently fold in the 1 cup of finely chopped pecans until they are evenly distributed throughout the dough.
- Step 4: Shape and Bake: Wet your hands slightly and roll the dough into 36 evenly sized balls (about 1 inch each). Place the dough balls on a parchment-lined baking sheet and bake for 12 minutes, or until the bottoms are lightly golden.
- Step 5: Cool and Sugar Coat: Let the cookies cool completely on the baking sheet. Place the remaining 1 cup of powdered sugar in a shallow bowl. Roll the cooled cookies in the powdered sugar to fully coat.
- Step 6: Serve: Serve and enjoy! (For an extra “snowy” coating, you can roll them a second time after the first coating has set for a few minutes.)
