How To Make Potato Kielbasa Soup:
- Cook Kielbasa & Vegetables: Heat the 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat. Add the 1 lb of sliced kielbasa and sauté until it is browned and cooked through. Remove the sausage from the pot and set it aside. Add the diced onion, chopped celery, diced carrots, and minced garlic to the same pot. Sauté until the vegetables begin to become tender.
- Cook Potatoes: Pour in the 4 cups of chicken broth and add the 1 ½ lbs of cubed potatoes to the pot. Bring the mixture to a boil, then cover and simmer for about 15 minutes, or until the potatoes are tender when pierced with a fork.
- Finish the Soup: Return the cooked sausage to the pot along with the 2 cups of milk, 2 cups of shredded cheddar cheese, and ½ cup of shredded Parmesan cheese. Stir until the cheeses are fully melted and the soup is creamy. Simmer for another 10 minutes.
- Season & Serve: Add salt and pepper to taste. Ladle the soup into bowls and serve immediately, garnished with chopped parsley.
