“Slow Cooker Creamy Potato & Beef Soup Recipe”

This warm and satisfying crockpot soup blends ground beef, tender potatoes, and rich, creamy flavors. Ideal for chilly days, it’s simple to make and full of comforting taste.

Ingredients:

  • Ground beef – 1 pound
  • Medium potatoes, peeled & diced – 5-6
  • Onion, diced – 1
  • Garlic, minced – 3 cloves
  • Chicken broth – 3 cups
  • Dried parsley – 1 teaspoon
  • Dried thyme – 1 teaspoon
  • Dried basil – 1 teaspoon
  • Salt & pepper – to taste
  • Whole milk or half-and-half – 3 cups
  • Grated cheddar cheese – 2 cups
  • All-purpose flour (optional) – 1/4 cup
  • Butter (optional) – 2 tablespoons
  • Chopped green onions or fresh parsley (optional, for garnish)

Instructions:

  1. Cook the beef: Brown ground beef in a pan, drain excess fat, and transfer to the slow cooker.
  2. Add vegetables: Mix in diced potatoes, onion, and garlic with the beef.
  3. Combine broth and seasonings: Pour in chicken broth, parsley, thyme, basil, salt, and pepper. Stir well.
  4. Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes are tender.
  5. Add creamy ingredients: About 30 minutes before serving, stir in milk (or half-and-half) and shredded cheddar until smooth and creamy.
